    I have lived in California all my life and never baked with parchment paper. I had your second choice in my drawer for years, and only used it once. I just recently realized that this paper is good for rolling out dough, I would bake pies more often if i had known this. Last year I invested in a pastry cloth, well after 3 uses ; it started to stick. I am going to throw my pastry cloth out the window. Parchment paper rules !!
